Modified Atkins Garlic Parmesan Chicken Wings

Casey was going to watch the Super Bowl with a friend, and wanted to bring something he could eat and share with everyone else.  He had seen these at a Rally’s Burgers near his school, and thought we could come up with something similar at home.  They are easy to make, and really tasty.  We have also made them into chicken fingers by using breast meat cut into strips, and adjusting the cooking time.

1 Cup shredded or grated parmesan cheese

1 tbsp fresh chopped parsley

1 tbsp fresh chopped oregano

1 tsp salt

1/2 tsp freshly ground pepper

1/2 tsp cayenne or 1 tsp hot sauce (optional)

2 lbs chicken wings

1/2 cup melted butter

3-4 cloves garlic, minced

Heat oven to 375 degrees F.

Melt butter with the garlic and cook over very low heat to allow the garlic to infuse the butter, for about 10 minutes.

Mix first six ingredients together in a shallow bowl.

Dip each piece of chicken into the butter mixture, then roll in the cheese mixture coating well.  Place on a greased baking sheet, and bake for 45 minutes or until golden brown.  Turn if they get too brown on top.

Depending on the brand of cheese you use, these can be a no-carb or very low carb dish.  There are trace carbs from the garlic, oregano and parsley but in very small amounts per serving.
